Restaurant’s new executive chef Chittum to lead launch of menu features.COLUMBUS, Ohio — M, Cameron Mitchell Restaurants’ (CMR) marquee restaurant, is announcing a new menu, introduced under the direction of recently named Executive Chef Erin Chittum. The menu showcases a number of fresh, seasonal ingredients and a diverse array of appetizer, salad and entrée selections.“Our new menu highlights what guests want in their restaurant choices today,” said Kristen Luff, M General Manager. “The highest quality, freshest ingredients have been used to build a menu that is straightforward, while still elegant, and that will please even the most select palates.”Among the new items to be featured are a Crabcake Appetizer with Avocado and Plum Tomato Gazpacho, a fresh twist on a seafood favorite. A new Green Salad includes Organic Gem lettuce – a simple, but delicious, presentation. The White Tuna entrée with Spring Peas, Wild Mushrooms and finished in Lobster Emulsion provides the foundation for the menu’s entrée presentations. Guests will delight in the new “Steak-N-Eggs,” featuring a Filet Mignon, Goat Cheese Hashbrown, Dippy Egg, Caviar and Sauce Béarnaise.The restaurant’s prime offerings have been bolstered by the addition of a half-pound Kobe Beef burger served with truffle fries, and a variety of new topping selections for steaks. Those topping choices include a bleu cheese crust, béarnaise sauce, green peppercorn cognac sauce and a red wine Bordelaise sauce. Guests may also choose the “Oscar” or “Rossini” style toppings. To match the fresh new menu, Luff has livened up the restaurant’s environment as well. M associates are wearing new uniforms, and music and video behind the restaurant’s bar has been updated.Executive Chef Erin Chittum joined Cameron Mitchell Restaurants as an apprentice at M in 2002 and returned to M in May 2009 in her current position.
